  • In your breakfast cereal: the easiest way to incorporate Medjool dates in your diet is by adding 2-3 of them to your breakfast cereal. Due to their soft texture, they are quite easy to crush into a paste. 
  • Peanut butter and date sandwich: When you make a PB&J sandwich, you can swap out the jam for a couple of Medjool dates instead. Remove the pit from a couple of dates and smash them between your fingers. Then add the soft date on a piece of toast with a layer of peanut butter. 
  • Almond Date cookies: Start by preheating the oven to 375 F and preparing the baking trays by lining them with baking paper. In a bowl add 2 ½ cups of blanched almond flour, 1 cup of chopped Medjool dates, ½ cup of chopped cherries, ½ cup of chopped walnuts, ½ teaspoon of baking powder, and a pinch of sea salt, and mix them well. Add 1 whole egg, ½ cup of coconut oil, 1 teaspoon of vanilla extract, and 2 tablespoons of maple syrup or any other syrup of your choice. Mix everything thoroughly until a dough forms. Scoop one tablespoon of the mixture at a time and place it onto the baking tray with 2 inches of gap between each scoop. Bake for 15 minutes and let them cool for 10 minutes outside the oven before enjoying the cookies.
  • Medjool date brownies: Start by preheating the oven to 375 F and lining a brownie pan with baking paper. Crush 30 or so graham crackers and mix them with ½ cup of melted butter. Press down this mixture on the baking tray to form a pie crust. In a bowl mix together 1 can of sweetened condensed milk, 3 eggs, 1 teaspoon of vanilla extract, 1 cup of chopped walnuts, and 1 cup of chopped Medjool dates. Combine everything thoroughly. Pour it into the pie crust and bake for 35 minutes in the preheated oven. Cut into squares once it’s baked.
